This stir-fry does not require additional liquid as the mushrooms give off a lot of juice. If you prefer a thicker sauce, simply raise the heat to reduce the liquid slightly.

Ingredients:
Shiitake or chestnut mushrooms: 120g pack
Portabelini mushrooms: 250 g(9oz)
Corn oil: 1 tbsp
Red pepper: 1 large, deseeded, halved, and cut into thin strips widthways
Spring onions: 6, trimmed and cut into short lengths diagonally
Sweet chili sauce: 1-2 tbsp
Reduced salt soy sauce: 1-2 tbsp
Bean sprouts: 200g pack

Method of Preparation:
- Wash and thoroughly dry all the mushrooms, Depending on their size, thickly slice or leave whole.
- Heat the oil in a large work or frying pan, then add the pepper strips and spring onions and stir fry for 1-2 minutes or until just beginning to soften.
- Add all the prepared mushrooms and continue to stir-fry over high heat for 3-4 minutes, or until the mushrooms start to soften and give off their juices.
- Add the sweet chili sauce, soy sauce, and bean sprouts to the pan. Continue to stir-fry over high heat until the sauce is hot and the bean sprouts are just beginning the soften . Serve the stir-fry immediately while hot.
