Twice-Baked Potatoes recipe is easy and nutritious. The eggs contain a whole host of vitamins and so provide you with plenty of nutrients essential for the body. Eggs do contain cholesterol but this has much less effect on the level of cholesterol in the blood than saturated fat.

Cooking Tips:

For finishing touches, sprinkle a little paprika and extra chopped chives over the potatoes just before serving. These potatoes are delicious and served with baked beans.

Ingredients:

Baking potatoes: 2 large sized

Olive oil: 1tbsp

Mature Cheddar cheese: 50- 75 g

Semi-skimmed milk: 1-2 tbsp

Chopped chives: 3 tbsp

Eggs: 4 large sized

Recipe Preparation:

1) Preheat the oven to 220C/425F/Gas 7. Scrub and dry the potatoes, prick them well with a fork and then brush each one lightly all over with the olive oil.

2) Place the potatoes on a baking tray and baking tray and bake in the oven for 454 minutes to 1 hour, or until they feel soft in the center when tested with the point of a knife.

3) When cooked, remove the potatoes from the oven and put them on a board( leaving the oven on). Cut potatoes in half. Then, scoop the soft potato out into a bowl. Set the skin aside.

5)Then, using the back of the metal spoon, make a large, deep hollow in the center of each potato that is deep enough to take an egg. The potato mixture rises above the edge of the skin, which is important as it prevents the eggs from running out of the hollow.

6) Place the filled potato shells on a baking tray and break the eggs into a teacup, one by one, and very carefully pour into the center of each potato.

7)Return the potatoes to the oven and cook for 10-15 minutes, until the potato boarders are golden brown and the egg whites are set, but the yolks are still soft take care not to overcook them.
